4 8 oz pkg cooked diced ham,
drained well
6 large hard-boiled eggs, peeled
and chopped
1 cup chopped celery
3 tbsp sweet pickle relish
2 tbsp chopped fresh parsley
1 tsp black pepper
3/4 cup mayonnaise
Arugula (love arugula)

Directions:

In a medium bowl, combine ham, eggs celery, relish, parsley, and pepper. Add mayo and stir to
combine. Cover and refrig up to 3 days. Serve with arugula, if desired.

You can substitute 1/2 cup chopped onion for celery or use both. Makes a nice crunch.
