1 10-17 ounce can diced tomatoes with green chilies
1/2 red onion, chopped fine
1 tablespoon cilantro, minced
1 jalapeno pepper, seeded and chopped
1 garlic clove, minced
1 tablespoon olive oil
salt/pepper to taste
tortilla chips

Directions:

1.Mix together all ingredients except the tortilla chips.
2. It is better if it is made and given a chance to rest so the flavors blend.
3. Serve with tortilla chips

If you use Rotel tomatoes the can is smaller but if you use store brand or Hunts tomatoes the cans are larger. Either size will work. I leave out the jalapeno pepper because Dad doesn't like that much heat. All the ingredients can be tweaked to meet your individual tastes.
