1 Tbsp. extra-virgin olive oil
1 Tbsp. red wine vinegar
2 firm tomatoes, seeded, diced
1 cucumber, peeled, seeded, diced
1/2 red onion, diced
Salt
Freshly ground black pepper

Directions:
Directions:
Dice the tomatoes, cucumbers, and onions and then toss them in the olive oil and vinegar until thoroughly coated. Season to taste. Cover and chill at least 1 hour to marry the flavors.
