¼ c achiote oil (pon el aceite de oliva con achiote a calentar para que tome el color rojito)
1 3 to 4 lb. chicken, cut into 10 pieces
6 chorizos, andouille, or any smoked, garlicky sausages (1 1/4 pounds), cut into 1/2 inch slices
½ c sofrito (cebolla, ajo, cilantro, chile dulce,tomate)
¼ c alcaparrado (goya)
1 lb. large (about 20) shrimp shelled and deveined
4 cups long-grain rice
about 6 bottled of clam juice or chicken broth
1 dozen littleneck clams, clean and soaked in a cornmeal bath(put the clams in flat bottom bowl with water and put a spoon of maseca for 1 hour)
1 lb. mussels, scrubbed
½ c diced(½ inch)roasted red pepper

Heat the oil in a paellera (or pan) over medium-high heat until rippling. Season the chicken with salt and pepper, add chicken to pan (skin side down) without touching. Brown on all sides, about 10 min. Remove and set aside. Adjust the heat under the pan when you start removing chicken so the chicken browns without the oil darkening. Add the chorizo to the pan, stir until lightly browned. Add the sofrito, alcaparrado, salt and pepper. Raise the heat to high. Add the shrimp, stir until they change color 1 to 2 min. Stir in the rice until coated with oil. Return the chicken to the pan, pour in enough clam juice to cover the rice by half inch (the shellfish will render more liquid), and bring to boil. Cook over high heat until the level of liquid reaches the rice. Nestle the shellfish into the rice among the chicken pieces. Adjust the heat to low, cover the pan. Cook until the rice is tender, the liquid has been absorbed, and the chicken its cooked through. Timing will vary depending on your pan; check after 20min. Scatter the roasted red pepper over the top, give the paella a big stir.... and serve immediately to Clint!
