Lamb Kebabs Recipe

1 pound of ground lamb
1/2 cup chopped mint leaves
2 tbsp lemon juice
2 tbsp grated garlic
1/4 cup finely chopped yellow onion
1 lemon wedge and 1 tbsp mint for garnish
Bamboo skewers
salt to taste

Directions:
Directions:
Mix together all the ingredients together. Make the bamboo skewers wet and put the meat mixture around each skewer to form a cylinder. Make sure you put the meat one inch below the skewer top and one inch above the skewer bottom. Put a cake cooling rack on a cake pan and put the skewers with the kebabs on the rack and then broil the kebabs in the middle rack of the oven. Make sure you set the broil temperature to 400. Broil the kebabs for 15 minutes then get them out and rotate them that way the other side becomes brown and broil for 5 more minutes.

Remove the kebabs from the oven and garnish them with lemon juice, chopped mint before serving.

You can make these into round balls and serve as appetizer with cucumber-mint raita (sauce) and little pita breads.
