1 - Large yellow onion, chopped fine
1/2 - Cup extra virgin olive oil
5 - Toes garlic, finely minced (or crushed through garlic press)
2 - Cans Artichoke hearts, drained & coarsely chopped
2 - Cans French style green beans
1 - Cup fresh finely grated Parmesan or Romano cheese
1-1/2 - Cups Italian bread crumbs
salt, black pepper, and Tony Chachere's Cajun seasoning to taste

Preheat oven to 350º.

In non-stick skillet on medium heat, saute onions in olive oil until clear. Add garlic and continue cooking for 5 minutes until garlic is softened. Remove from heat and allow to cool to room temperature.

Empty green beans into collander, rinse with hot water, drain thoroughly.

In large bowl, add chopped & drained artichoke hearts green beans, cooled onion mixture, Parmesan cheese, and bread crumbs. Mix thoroughly, season to taste. If mixture is too dry, add olive oil.

Spray 9 x 13 casserole dish with non-stick cooking spray. Place mixture into casserole dish & cover tightly with aluminum foil. Bake at 350º for 30 minutes.

OPTIONAL: Sprinkle top of casserole liberally with Italian bread crumbs & grated Parmesan cheese before baking.
