2 Ciabatta rolls, split (English muffins would be good also)
3 T olive oil divided
8 slices bacon, cooked crisp
2 hard-boiled eggs, sliced
1 cup baby spinach
1/2 c. sliced red onion
1/2 c. crumbled feta cheese
2 T. balsamic vinegar
salt and pepper to taste

Directions:
Place rolls, cut side down, on a work surface and brush crusts with 1 T. of the oil. Turn rolls over and, on bottom halves, evenly layer with bacon, eggs, spinach, onion and feta. Drizzle with vinegar and the remaining oil, and sprinkle with salt and pepper. Cover with top halves and press gently to pack.
Place sandwiches in grill, close the top plate and cook until golden brown, 3 to 4 minutes. Serve immediately.
Note: I use a Foreman grill, but you could also just grill in a skillet.
