1/4 c. olive oil
3/4 c. sugar
2 tsp. vanilla
1/2 tsp. almond extract
2 eggs
1/ 3/4 c. flour
1/4 tsp. salt
1 tsp. baking powder
1/2 c. dried cranberries
1 1/2 c. pistachio nuts

Directions:
Directions:
Mix oil and sugar together, add vanilla and almond extracts. Add egg, flour, salt and baking powder. By hand, add in cranberries and nuts. Divide dough in half and form into 2 logs about 12" x 2" onto a cookie sheet lined with parchment paper. Bake at 300º for 35 minutes. Remove and cool for 10 minutes. Reduce oven heat to 275º. Slice logs diagonally and lay pieces on parchment covered cooking sheet. Bake at 275º for 8-10 minutes.
