Ingredients: 3/4 c. flour pinch of salt 1-1/4 c. milk 1 egg yolk 1 egg 1 T. melted butter or light oil

Directions:Put flour into a mixing bowl. Add salt,egg yolk, whole egg and 1/2 the milk. Stir with a wire whip until smooth. Add the remainder of the milk and the melted butter or oil. Put about 1 T. oil in the pan and heat it until it is hot. Tip out the oil. Return the pan to a moderately high heat. Put a spoonful of batter in the pan and roll it around quickly until the base is completely covered. Tip out any excess batter. The crepes should be as thin as possible. As soon as the batter appears dull and the edges are brown, use a spatula and flip the crepe onto the other side. The second side cooks more quickly. |

Notes: Sometimes you have to throw the first crepe or two away until you get the heat of your pan just right. Occasionally you have to add a touch more oil to the pan, just don't add too much. You don't want the crepes to taste like the oil.
