1 double pie shell
1/2 c honey
4 T arrowroot
1/4 t salt
5 c fresh blueberries (frozen works too)
1 T butter
1 T lemon juice
2 T unbleached white of whole wheat pastry flour

Directions:
Directions:
Roll out the bottom of crust and fit into a 10" pie plate. Set aside. Refrigerate the remaining dough.
Mix honey and arrowroot in saucepan. Add salt. Add berries and simmer gently until mixture becomes thick and clear. Don't overstir. Stir in butter, lemon juice, and flour. Pour onto unbaked pie shell. Roll out remaining dough for pie crust top. (latticework is optional) Place top crust over filling and join crusts, fluting edges. If not making lattice crust, cut a slash in the center of the top of the pie crust to let steam escape.
Bake 10 min at 425º. Then lower temp to 350º and continue to bake for 30 min. until golden brown. Allow to cool at least 1 hour before serving.
