1 c sour cream
3 eggs beaten
3 c sharp grated cheddar cheese
dash of salt
dash of black pepper
6 scallions chopped
2 medium tomatoes chopped
1 ripe avocado, peeled, pitted, and sliced into strips
1 unbaked 10" pie crust

Directions:
Directions:
Preheat oven to 375º. Mix together sour cream, eggs, and cheese. Stir in salt, pepper, scallions and tomatoes. Set aside. Lay out avocado slices on bottom of pie shell. pour cheese mixture over avocado slices and spread out evenly. Bake 40-45 min, until golden and puffy. Let set 10 min before serving.
