6 packed cups fresh spinach leaves
1 unbaked 10" pie shell
1/4 t basil
1 c grated of crumbled feta cheese
1 1/2 c grated cheddar cheese
1 T unbleached flour
4 eggs
1 1/2 c light cream
dash paprika

Directions:
Directions:
Preheat oven to 400º. Steam spinach, press excess water out and chop. Spread spinach on bottom of pie shell and sprinkle basil over it. Mix together feta and cheddar cheeses in a medium sized bowl. Toss flour over chesses and spread over spinach. Beat eggs well, add cream, and pour over cheese. Sprinkle with a dash of paprika.
Bake 15 min. Lower heat to 325º and bake 25-30 min longer, until golden and puffy. Allow to set 10 min before cutting.
