32 oz container of vegetable broth
1 inch piece of galangal
2 stalks of lemon grass
1/2 a lime
6 -10 leaves of thai basil
1 -2 tsp of hot garlic sauce
1/2 cup mushrooms
1/2 cup sliced carrots
1/2 cup sliced zucchini
1/2 cup small broccoli florets
1/2 cup cubed Lite Tofu or chicken
1 stalk of green onion finely chopped (the onion part and the green stalk thingy)
few sprigs of cilantro for garnish

Directions:
Pound the galangal, white part of the lemon grass (that is take 1/3 of the bottom part of the stalk), 1/2 the basil leaves and add to the broth. Add 1 1/2 cups of water to the broth.Boil the broth for about 30 mins with all the stuff you put in the previous step.Strain the broth or simply remove the galangal and the other pounded stuff.Now add to the broth:all the veggies,tofu or chicken, remaining basil leaves, 2-4 strips (middle part) of the lemon grass, hot garlic sauce, and lime juice. Add salt to taste. Boil till all the veggies (& chicken --if you are adding it) are cooked.Before serving garnish with green onions and cilantro sprigs.

vegetable broth (I buy safeway or whole foods)
galangal (this is thai ginger---whole foods carries --it can stay in your fridge for weeks); lemon grass (-whole foods carries --it can stay in your fridge for weeks).
Vegetables---You can make life easy and just buy a container of chopped fresh stir fry veggies from Trader Joe or Whole foods.
