1 small zucchini, diced
1/2 red bell pepper, diced
1 carrot, diced
2 tsp. red onion, diced
5 tsp. olive oil
1 c. chicken broth
3/4 c. uncooked couscous
salt and black pepper to taste

Directions:
Directions:
Saute vegetables in 2 tsp. of the olive oil until just tender. Set aside. Bring chicken broth to a boil. Stir in couscous, cover, remove from heat and let stand for 5 minutes. Add sauteed vegetables and fluff with fork. Add remaining olive oil and season with salt and pepper. Serve warm or cold.
