4 chicken breasts or 3 lbs. chicken
1/2 lb. fresh mushrooms sliced
2 T. butter
1 can (14 oz) chicken broth
1/4 c. butter
1/4 c. flour
1/4 tsp. salt
1/8 tsp. pepper
3/4 c. light cream (half & half)
1/2 c. Parmesan cheese - freshly grated (not the canned kind)
1/2 tsp. dried rosemary, crushed
1 can (14 oz) artichoke hearts

Cook chicken in broth until done. ( Remove skin and bones if applicable) Cut chicken into bite sized chunks & put in a 9 x 13 baking pan. Slice mushrooms over chicken. Slice artichoke hearts and put over mushrooms. Set aside.

Melt 1/4 c. butter, stir in flour, salt & pepper till smooth. Gradually stir in cream and 3/4 c. chicken broth (what the chicken was cooked in). Cook & stir over medium low heat until it comes to a boil & thickens. Blend in Parmesan cheese and rosemary. Pour over artichokes. Bake at 350º for 45 min. to an hour.
