1 pound potatoes peeled and cut into cubes
1 cup sliced carrots
1 cup sliced celery
1 cup chopped onions
2-3 chicken or vegetarian bouillon cubes
1/8 tsp. black pepper
4 oz. sharp cheddar cheese-shredded
water

Directions:
Directions:
Place all veggies in a large pan with the bouillon cubes and pepper. Cover with water. Bring to a boil then reduce heat to simmer for 25 mins. or until the veggies are tender. Use an emersion blender and puree the veggies. Add cheese and heat until the cheese is melted. Use low heat so the soup won't burn.
