4 cups plain lowfat yogurt
1 cucumber, seeded and chopped
1/4 cup fresh mint leaves
1 clove garlic, crushed with salt
2-1/2 teaspoons hot sauce
1/2 lemon, juice and zest
Salt and Black Pepper to taste

Line a mesh strainer with paper towels and place the strainer over a large bowl. Pour the yogurt into the strainer, cover with plastic wrap, and place in refrigerator overnight to drain. The yogurt should reduce in volume by half and it will be very thick.

Place all ingredients in a food processor, and blend until smooth. Season to taste. Refrigerate for at least an hour before serving so that it firms up again.

Crudites Platter: Any vegetable of choice cut into sticks: celery, carrots, bell peppers, cucumbers, unlimited. Also consider, toasted pita triangles, tortilla chips, etc.
