Cake: 3/4 C unsweetened cocoa powder
2 C sugar
1 3/4 C unbleached flour (cake flour is helpful)
1 t baking powder, 1 t baking soda, 1 t salt
1/2 C vegetable oil
1 C fresh strong coffee (I make espresso)
1 C milk, buttermilk or yogurt
2 eggs, 1 t pure vanilla extract

Preheat oven to 350º. Lightly butter or spray cake pans or muffin tins (or use liners.)

In a large bowl sift together (secret - I don't sift - I just measure light). cocoa, sugar, flour, baking powder, baking soda and salt. In another bowl with a whisk or electric mixer, lightly beat together the oil, coffee, milk (or buttermilk or yogurt), eggs and vanilla. Pour half of the wet ingredients into the dry ingredients and mix until smooth. Add remaining wet ingredients and stir until incorporated.
Pour the batter into the prepared pan(s) and bake for 20 to 40 minutes. cool before frosting.
9 x 13 inch pan - 25-30 minutes, Two 9-inch rounds - 35-40 minutes, 24 cupcakes - 20 minutes

This is in heavy rotation for birthdays and cupcake needs. I usually use the chocolate frosting listed separately in this cookbook. This picture used the white frosting from the spongecake recipe.
