1 med. onion
1/4 c. olive oil
2 med. garlic cloves, peeled and minced
1 c. petite diced tomatoes
2 cans tomato sauce
1 can tomato paste
1 tsp. Italian seasoning
2-3 shakes crushed red pepper
Pinch of sugar

Chicken:
4 chicken breasts
Salt
2 eggs
1 c. panko breadcrumbs
1 c. grated parmesean cheese
1 Tbs. Italian seasoning
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 c. olive oil
8 oz. mozzerella cheese

Prepare the sauce. Coarsely grate the onion. Grating the onion will create smaller onion pieces and releases more of the onion's juices, and is faster than chopping. Heat olive oil in a saucepan on medium-high heat. Add the onions and saute for 2-3 minutes. Add the minced garlic. cook until fragrant, about a minute more. Then add the tomatoes, italian seasoning, red pepper flakes, and sugar. Bring to a simmer, reduce heat to maintain the simmer. Cook, uncovered while you prepare the chicken (about 10-12 minutes).

Place chicken breasts, one at a time, under a piece of plastic wrap and pound to 1/4 -1/2 inch thick. Cut each breast in half. Salt the chicken pieces well.

In a shallow bowl, mix together the breadcrumbs, parmesean cheese, italian seasoning, onion powder, garlic powder, and a pinch of salt. Dredge chiken in 2 beaten eggs, then in dry mixture.

Heat 1/4 c. olive oil in large saute pan on meduim-high heat. Lay the pieces of chicken in hot saute pan, turning heat to medium to fry cutlets (about 3-4 minutes per side). Add mozerella on top of cooked chiken.

Cook pasta. Put cooked chicken on pasta and cover in sauce.
