4 oz. unsalted butter
1 bar (4 oz.) Ghirardelli 60% cocoa bittersweet chocolate baking bar
2 whole eggs
2 egg yolks
1/3 C sugar
1/2 t vanilla
1 T cake flour
Directions:
Directions:
Preheat to 450 - Butter and sugar 4 6-oz. ramekins
Melt butter and chocolate in a double boiler. Whip eggs, yolks, sugar and vanilla with a mixer for about ten minutes on high speed. Fold melted chocolate and butter into egg mixture. Fold in flour until just combined. Spoon mixture into ramekins.

Bake at 450º for 9-10 minutes. The center is quite soft but the top and sides are set. Let sit out of oven for about 5 minutes, then unmold onto plate. Serve with a few raspberries and a dollop of whipped cream.

This is a favorite of Grafton's and the ingredients can easily be found in a prepared pantry so spontaneity is an option here. Sometimes it "flops" on the plates - but no one cares cuz it tastes so good. it can be made in a jiff.
