1 pint plain greek yogurt
1 seedless cucumber, unpeeled
1 T. plus 1/2 t. salt
1/2 c. sour cream
1 T Champagne vinegar or white wine vinegar
2 T. freshly squeezed lemon juice
1 T. olive oil
1 1/2 t. minced garlic
1 1/2 t. minced fresh dill
pinch pepper

Directions:
Directions:
Place yogurt in a bowl. Grate the cucumber and toss it with 1 T. of kosher salt; place it in cheesecloth, and wring out liquid. Add together. Mix in the sour cream, vinegar, lemon juice, olive oil, garlic, dill, 1/2 t. salt and pepper. You can serve it immediately or let set for a few hours.
