2 cups sugar
21/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/4 cloves
1/4 nutmeg
2 tsp cinnamon
1/2 tsp ginger
2 eggs, slightly beaten
1 cup pumpkin
1/2 cup vegetable oil
2 cups peeled and diced apples

Mix dry ingredients in large bowl. Combine eggs, pumpkin, and oil; add to dry ingredients. Mix only until moistened. Stir in apples. Spoon into greased or paper-lined muffin tins, filing 3/4 full. Sprinkle with Streusel Topping. Bake at 350º for 35 - 40 minutes or until toothpick comes out clean.
STREUSEL TOPPING;
2 TBSP FLOUR; 1/4 CUP SUGAR; 1/2 TSP CINNAMON; 4 TSP. BUTTER
