2 eggs
1 cup Sugar
1 cup grated carrots
3/4 cup corn oil
1/2 cup chopped nuts
1 1/4 cup flour
pinch salt
1 teaspoon Baking powder
1 teaspoon Baking soda
1 teaspoon Cinnamon

Directions:
Directions:
Beat eggs lightly, add 1 cup sugar, carrots, oil, nuts. Mix well. Sift flour, salt, baking powder, baking soda and cinnamon. Gradually add to first mixture Pour batter into greased tube pan.
Bake at 350º for 40 - 50 minutes, cool for 10 minutes Cool and frost.

Cream cheese frosting - Cream 1/2 stick butter and 8 oz. cream cheese Add 1 teaspoon of vanilla and a pinch of salt. Gradually beat in 8 oz of sifted confectioner's sugar. Spread over cake.
