Directions:Combine gelatin and 1/2 C cold water in the bowl of an electric mixer with a whisk attachment. Let stand for 30 minutes. .
Combine sugar, corn syrup, salt and 1/2 C water in a small heavy saucepan; place over low heat and stir until sugar has dissolved. Wash down sides with a pastry brush to dissolve sugar crystals.
Clip on a candy thermometer, raise to high heat. Cook syrup without stirring until it reaches 244º (firm ball stage.) Make sure to reach this temperature! Immediately remove from the heat.
With mixer on low speed (i love the kitchenaid mixer that Betty Jo Novak, Dean's mom gave me from their restaurant, Phils, because it makes this kind of thing so much easier - thank you betty!). anyway, with the mixer on low speed, slowly and carefully pour syrup into the softened gelatin. Increase the speed to high; beat until mixture is very thick and white and has almost tripled in volume, about 15 minutes. Make sure to go the full 15 minutes or they won't be light and fluffy. (They'll be dense and thinner - boo.)
add the vanilla and continue mixing.
Generously dust an 8 x 12 glass baking pan with confectioner's sugar. Pour the marshmallow mixture into the pan. It can get sticky and if you need to, wet fingers to help keep it from getting all over your hands. A rubber spatula can help get it into the pan - work fast! With wet hands, pat it smooth. Dust it with confectioner's sugar and let it stand overnight, uncovered. In the morning, cut around the edges, flip onto a board and cut the marshmallows into squares and dust with more sugar.
I load them into holiday cellophane bags, dust with more sugar and partner with good cocoa for gifting. And we have our own stash for the entire season. |

Notes: Homemade marshmallows with good quality cocoa are my gift of choice during the holidays. I make a batch a night for numerous nights around the holidays. Not a marshmallow fan? neither am I. I don't like s'mores, don't need store bought marshmallows in my life. But have you ever had a homemade marshmallow with GOOD quality cocoa? Don't judge until you have! It's not in here for nothin! Warning, though, sis Joanne broke her mixer trying to make them! They get thick fast!
