4 Salmon fillets (as big as you want for each person).
1 lime
salt, pepper, and garlic powder
1 tbsp. of unsalted butter (Becel works too!) cut into 4 tiny cubes
1 tbsp. olive oil

COUSCOUS:
2 1/2 cups chicken or beef stock
1/2 tsp. salt
2 tsp. unsalted butter
1 1/2 cups couscous
1 cup diced tomatoes skinned and seeds removed
1 cup feta cheese
1/2 cup chopped green onion (more or less if you desire)
juice of 1/2 fresh lemon

Pre heat oven to 350' F. In a 9"x13" baking pan add the olive oil. Place each salmon fillet in the bottom of the pan. Sprinkle each fillet with salt, pepper and garlice powder. Cut the lime in half and squeeze each half over the seasoned salmon. Place one cube of butter over each salmon fillet. Cover with foil. Bake for 30 minutes, or until the salmon flakes easily.

For Couscous:
Add stock, salt, and butter to a saucepan and bring the whole thing to a boil. Add the couscous and mix it. Add the tomatoes, onions and feta cheese. Take the whole thing off the stove and let sit for about 5-10 minutes, covered. Uncover, fluff with a fork while sqeezing the lemon juice into the couscous. Makes 4 generous servings.

If serving the couscous with the salmon dish, serve hot.
You can also serve the couscous cold as a side dish to meat
Likewise you can serve the salmon over a bed of hot rice.
The citrus flavours in this dish really brighten it up!
