3/4 lb boneless beef top round steak
1 c water
1/4 c dry sherry, or apple juice
3 tbsp soy sauce
2 large carrots, cut into diagonal slices
1 large green pepper, cut into strips
1 medium onion, cut into chunks
2 tbsp vegetable oil, divided
1 tbsp cornstarch
2 c hot cooked rice

Directions:
Directions:
Partially freeze steak, slice across the grain into 1/8-inch strips. Combine water, sherry and soy sauce. Pour over beef in dish, cover. Marinate 1 hour in refrigerator. Stir-fry vegetables in 1 tbsp oil in large skillet over medium-high heat. Remove from skillet, set aside. Drain beef, reserving marinade. Brown beef in remaining 1 tbsp oil. Combine cornstarch with marinade in bowl. Add vegetables and marinade to beef. Cook, stirring until sauce is thickened, cook 1 minute longer. Serve over rice.
