1-2 cups cooked rice.
I can black beans, lightly drained
2 tsp. taco seasoning (or just chili powder & cumin)
Large Corn tortillas
Toppings:
Lettuce, chopped
Cilantro, chopped
Tomato, chopped
Avocado, chopped
Cheese
Salsa
Sour Cream

Cook rice. Heat beans in a saucepan with taco seasonings and maybe some garlic and onion. Warm corn tortillas. Chop all veggies and place in small serving bowls or a platter. Let everyone build their tacos with the rice, beans and desired toppings.

This is a vague recipe, I know. But this is the meal that my husband says he would eat three times a week, so I had to include it. It is just vegetarian tacos. I use brown rice and season the beans to taste. Warming tortillas over a gas flame or in a dry cast iron skillet, then placing in a clean kitchen towel until ready to eat gives nice textured tortillas that don't easily fall apart. These really are so delicious.
