8 c. tomatoes
4-5 c. peppers
2 c.s onions
1-3 jalapeño peppers (to taste)
8 cloves garlic
2 5 oz tomato paste
2 c. vinegar
1 tbsp. pickling salt
2 tbsp. sugar
1 tsp. paprika
½ cup cilantro or parsley
1 tsp. basil

Chop it all up, put it in an very large pot, bring to a boil and simmer until it cooks down to the consistency that you want (depends on how juicy your tomatoes are – it may take anywhere from 30 minutes to 2 hours),. Sometimes, depending on the juice level, you may have to drain off some of the liquid.

Spoon into very hot sterilized jars, seal and enjoy.

Yields 7 pints of actual salsa and possibly so additional salsa juice to add to your favorite Caesar drink!
