8 med. potatoes, peeled and cut into 1-inch cubes
1 c. evaporated milk
1/2 c. sour cream
1/2 tsp. black pepper
1 tsp. salt
2 c. shredded cheddar cheese
1 pkg. real bacon bits

Directions:
Directions:
Place potatoes in a large pan. Cover with water; bring to a boil. Cook over medium heat for 15 to 20 minutes or until tender; drain. Preheat oven to 350º. Grease a 2-1/2 to 3-quart casserole dish. Return potatoes to pan; add evaporated milk, sour cream, pepper and salt. Beat with mixer until smooth. Stir in 1-1/2 cups cheese and 1/2 of the bacon. Spoon mixture into prepared casserole dish. Bake for 20 to 25 minutes or until heated through. Top with remaining cheese and bacon bits. Bake for an additional 3 minutes or until cheese is melted.
