Ingredients:  
Pork Chop Coating:
1 cup fine bread crumbs
1 tsp. salt
1 tsp. Parmesan cheese
½ tsp. powdered thyme
1 tsp. paprika
½ cup margarine or butter
1 egg, slightly beaten
4-6 pork chops

Yams & Apple Sticks:

2 large apples
2 cans (1 lb) yams
1 tsp cinnamon
1 tsp lemon juice
1 tbsp. butter

Directions:
Directions:
Pork Chops: Combine the first 5 ingredients . Add butter, dip chops in egg then in bread mixture. Bake.

Yams & Apple Sticks: Core and slice apples. Simmer in juice from yams seasoned with cinnamon, lemon juice & butter. When apples are tender, add yams. Serve with pork chops.

Memories: D.J. was Mother's first grandchild, and she adores him. Heaven help the person who hurt one of her babies. Mother was like a mama tiger protecting her cubs, and everyone knew it. When D.J. graduated from high school, he applied for a job at the prison camp. Our cousin, Victor Hall, was over the guards then, and he stopped by to talk with Doug. He said, "I am going to give the boy a job, but if it doesn't work out, you've got to keep Gurf off my back." He wasn't worried about Doug; he was worried about having to deal with Mother. Years after D.J. moved to Florida, I would hear Mother calling out to him in her sleep. I knew she missed him. Every one of our kids absolutely adores their grandmother. They were always special to her, and she is special to them. As Grandma and Grandpa were once the center of our world; Mother is the center of our world now.
