5 cups brown vinegar
5 cups sugar
3 cups water
1 tsp black pepper
1 tsp cinnamon
1 tsp powdered cloves
4 tsp salt
1 onion cut in small pieces

Directions:
Directions:
Mix all ingredients and boil for 7 minutes. Pour over beets.
Makes 10 pints cooked beets. I put beets with ingred. and boil together.
Put in water bath 30 min.

* boil beets for about 20 minutes until skins peel easily. Put in cold water and skin. Cut up and add liquid. Cook together for about 15 min. Bottle as above.
I also cook the beets in my 4 qt pressure cooker, it is faster and works great.

These are so good to serve on a special occasion. They look so pretty on the table too. My grandmothers always used to serve them when the families would get together.
