1- 2 cups flour
2- 2 tsp cinnamon
3- 2 tsp baking soda
4- 2 tsp baking powder
5- 1 tbsp salt
6- 2 cups sugar
7- 1 cup oil
8- 4 eggs
9- 2 cups grated carrots
10- 1 cup of crushed walnuts
11- 8 oz of crushed pineapple

For the frosting
1- 8 oz package of cream cheese
2- 1/2 stick of margarine
3- 1 package (1 lb) of confectioners sugar
4- 1 tsp of vanilla

1- Mix all of the dry ingredients
2- Add oil and eggs to the dry ingredients and mix together
3- Add carrots, nuts and pineapple and mix together
4- Grease and flour a 9 by 13 pan. (I prefer to use Crisco for baking)
5- Bake for 50 minutes at 350º (watch for the last 15 minutes....use a toothpick to check for doneness.)
6- Mix the cream cheese, margarine, confectioners sugar and vanilla together....it will be thick...
7- Let the cake cool for an hour. Then frost the cake with the cream cheese mixture. If the cream cheese mixture is too thick....add just a drop of milk.

My grandmother has been making this for years.....and I have made it at all of the stations I have been assigned at around the holidays. Great with a nice glass of milk....
