3/4 c white sugar
1/4 c margarine
1/4 c shortening
2 eggs, separated
2 1/3 c flour
1 tsp grated lemon peel (optional)
2 tsp baking powder
1/2 tsp salt
1 c milk
1 c blueberries (canned, fresh or frozen)

Directions:
Directions:
Drain juice from Blueberries. Cream together, sugar, margarine and shortening. Add egg yolks and mix well. In a separate bowl, mix flour, baking powder and salt. Reserve 1/2 c of flour mixture and add remaining flour mixture to creamed ingredients alternately with milk. Stir until moistened. Beat egg whites until stiff peaks form, fold into batter. Combine berries and reserved flour mixture. Fold into batter and add lemon peel if desired. Fill greased muffin tins 2/3 full. Bake at 400ºfor 20-25 minutes. Makes 1 1/2 dozen muffins. Tops can be dipped in melted butter while they are still warm and then dipped sugar.
