6 Center cut pork chops, any thickness
1 small onion, diced
celery, chopped
1/2 loaf of bread, for stuffing (partly stale is fine)
1 - 2 T grated parm. cheese
pinch of oregano
parsley flakes, or fresh parsley (amt. your
preference)
hint of thyme
hint of rosemary
sprinkling of garlic powder, to your taste)
2 T butter
water to moisten

sliced fresh mushrooms
1 can of cream of mushroom soup
paprika

Directions:

Brown pork chops. Place in glass or metal baking pan.

Stuffing: sautee onions and celery in butter til tender. Add in to pan crumbled bread, (I put slices in the food processor to make bread crumbs for stuffing), add spices, butter, and water to moisten. Mix well. Cook on low for a few minutes.
Place a generous mound of stuffing on each pork chop in baking dish, add sliced mushrooms, pour on a spoonul of cream of mushroom over each pork chop, add water (about a 1/2 c.), sprinkle with paprika.
Cover.
Bake at 350 for 1 hour.
Remove cover for last 5 minutes

When I made this dish my kids would ask, "Did gramma send this over?" It's good for company, too. Garnish with fresh parsley, and you'll amaze your family and friends.
