1 med/large onion- finely chopped
Green Thai Curry Paste ( 11/2 Tablespoon depending on brand and how you like your curry )
11/2 Tablespoons Ginger root-finely chopped or grated
A couple of garlic cloves-finely chopped
Boneless and skinless chicken cut into 2 CM cubes.Capsicum-whatever color you like (i tend to use red)
Some greens,e.g. Broccoli, Green beans 9or both)
Tin of coconut cream (or milk)
Some coriander (fresh leaf is best)

Heat Wok (not too hot)-or electric frypan.Add sesame oil,onion&garlic.You want to sweat these ingredients off rather than brown them. When nearly there-add ginger & Green Thai Curry. If you have the pan too hot the latter will smoke-Add and brown the chicken. When chicken is brown add the coconut cream and the kumara-turn the pan down to a simmer. Add the Capsicum when the kumara is half cooked. Add the Greens at the very end when the Kumara is just about cooked (i like my greens with texture when i eat them).Season (salt & Pepper) and serve on Jasmine rice
with a little coriander leaf on top.
