1/2 c. to 1 c. butter
1 large onion
9 c. fresh picked string beans, cut into 1" pieces
1 1/2 c. water
1 Tbs. flour
1 c. sweet cream
6 c. whole milk
1 1/2 tsp. salt and pepper
1 egg (scrambled)
1 loaf crusty bread

Directions:
1. In a soup kettle melt butter, add onion and saute until onion is transparent.
2. Add beans and water, bring to a boil, turn heat to low, cover kettle, slowly cook beans until tender, (about 30 min.) stirring frequently (check to make sure beans do not run out of water, beans are not covered completely with water, start out with 1 1/2 cups and add a little more water as needed, you want the beans to steam.
3. When beans are soft, sprinkle flour over mixture and toss well.
4. Add milk and cream, slowly bring temperature up and simmer, if you bring milk to a boil, it may curdle.
5. When soup is very hot, slowly pour in scrambled egg, stir drops of egg with a fork
6. Serve with Crusty Bread and remember how much you are loved!!

Grandma Pauline originally used fresh spring peas from the garden. It is delicious made with fresh peas, very sweet. Made the same way just substitute peas for the string beans.
