2 c biscuit mix (Jiffy, etc)
2 T Sugar
3 T melted shortening
½ cup milk
3 cups sweetened fruit
_ whipped cream or Cool Whip

Directions:
Preheat oven to 450º
Combine all ingredients. Form a soft dough. Dust a smooth surface with flour or baking mix. Knead dough lightly. Pat or roll dough until it's ½ inch thick. Cut with 3" floured biscuit cutter. Bake on ungreased baking sheet 8 - 10 minutes. Split warm shortcakes and spoon sweetened fruit on bottom ½ and on top. Serve with whipped cream or Cool Whip.

Meat shortcakes may be made by eliminating sugar, fruit, and whipped cream from the recipe and placing creamed turkey, creamed chicken, or creamed tuna fish between layers and over top.
