Ripe tomatoes, peeled and sliced
Fresh mozzarella cheese, sliced
Fresh chiffonade of basil leaves
1/4 cup extra-virgin olive oil
1/4 cup white balsamic vinegar
Salt (optional) and freshly ground pepper

Directions:
Directions:
Place the sliced tomatoes on a plate and layer with mozzarella cheese, alternating tomatoes and cheese slices. Drizzle with the olive oil and vinegar mixture; sprinkle with basil chiffonade, fresh ground pepper and salt. Serve cold.

CHIFFONADE:
Chiffonade is a cutting technique that you can use to cut up any flat leafy food. It works great on things that you are going to eat fresh, like basil and lettuce and helps you cut uniform, curly, strips of food quickly and elegantly. Just stack the leaves, roll them up, and slice into thin strips.
