1/4 cup honey
1 tablespoon grated lemon peel
1 tablespoon lemon juice
1 teaspoon course sea salt
1 tablespoon fresh thyme leaves, chopped fine
1/2 teaspoon pepper
8 chicken legs (about 2 1/2 lb)

Heat gas or charcoal grill. In a small bowl, mix honey, lemon peel, lemon juice, 1/2 teaspoon salt, 1/4 teaspoon pepper and the thyme. Set aside.

Wash chicken and pat dry. Sprinkle chicken with remaining salt and pepper. Place chicken on grill, medium heat and cover grill. Cook for 16 to 20 + minutes, turning once. until juice of the chicken is clear when cut in thickest part (165 degrees F). Brush chicken legs generously with lemon-honey sauce, turning to coat evenly. Cover grill and cook 2 minutes more on each side, or until glaze is bubbly.

Place chicken on a serving patter. Garnish with fresh lemon wedges.
