1 1/4 pound peaches (about 4)
1 Tablespoon lemon juice
1 2/3 cups sugar, divided

1 stick butter melted
1 cup flour
1 Tablespoon baking powder
1/4 teaspoon salt
1 cup milk
cinnamon (optional)

Directions:
Preheat oven to 375 degrees with rack in middle position.

peel peaches and slice into thin slices. place in heavy sauce pan with lemon and 2/3 cup sugar. Bring to a boil and boil 4 minutes stirring occasionally. Remove from heat.

pour melted butter into 9x13 baking pan. Add peach mixture. whisk flour, baking powder, salt, and remaining sugar in a bowl until combined.Whisk in milk just until combined. DO NOT STIR AGAIN ! pour over peaches, sprinkle with cinnamon (if using)
Bake cobbler until bubbling and top is golden brown about 40-45 minutes. cool in pan and serve warm.

Personal Notes:
I like to omit the cinnamon and serve cinnamon ice cream. I make my own by using good vanilla ice cream, letting it sit at room temperature for about 10 minutes to soften, then dump in cinnamon to taste and stir. Refreeze. And by the way, any fresh or canned fruit works in this recipe.
