Marinade:
3TBSP of sugar,
2oz of red wine vinegar,
4oz of orange juice,
3TBSP of soy sauce,
1TSP of ground ginger,
1/4 TSP of crushed red pepper flakes

4 Yellow fin Tuna steaks 8oz--cut at least an inch thick,
3TBSP of butter,
3 cups of shredded cabbage,
I medium carrot-peeled and sliced into matchsticks,
3 green onion, chopped fine,
1TSP of soy sauce,
salt,
]pepper

Directions:
1. Combine all ingredients for the marinade in a wide shallow bowl. Marinate tuna steaks for about one minute on each side. Then, wrap each steak (still dripping) with plastic wrap. Refrigerate for at least one hour. Save remaining marinade.
2. Heat 2 TBSP of butter in skillet and cook cabbage, carrots and green onion with TSP of soy sauce until vegetables wilt.
3. In heavy skillet over medium heat add TBSP of butter. Sprinkle tuna with salt and pepper. Cook tuna for about a minute and a half on each side. Remove Tuna and keep warm
4. Reduce heat. Add reserved marinade to the skillet and bring to boil. Slightly reduce it
5. Place vegetables on plate. Place tuna on top and nap with reduce sauce.

Great recipe. From Tom Fitzmorris. Do not over cook Tuna. Be careful not to over use red pepper flakes. Also, I added more soy sauce--at least I tablespoon. and used fresh ground ginger. I also use the packed carrot sticks. Can serve with rice.
