Ingredients:  
1 (10 oz.) pkg. frozen chopped spinach (cooked)

Saute 1/2 c. sliced green onion in 2 Tbsp. butter. Add 2 Tbsp. flour and 1 c. milk. Cook over low heat until bubbly. Boil and stir 1 minute until smooth and thickened.

1 c. soda crackers (crumbs)
1 c. grated Parmesan cheese
8 boneless/skinless chicken breasts
1 c. cubed ham

Stir spinach and ham into white sauce. Combine crackers and Parmesan cheese. Dip chicken in crumb mixture. Arrange in greased 9x13 pan. Spoon white ham/spinach mixture over chicken. Cover with foil and bake at 350º for 60-75 minutes. Remove foil and sprinkle with remaining crumbs. Bake 10 minutes more. Makes 8 servings.
