1 can of pigeon peas (gandules)
2 cups of rice
1 garlic clove mashed
2 tbsp. of olive oil
1/2 onion
1/2 green pepper
2 cilantro leaves minced
1 tsp. small capers
1 tsp. stuffed olives
1/3 tsp. oregano
salt y pepper to taste
1/2 c. tomato sauce

Directions:
Directions:
Rinse rice. In a sauce pan heat oil, add onions, garlic, green pepper, capers, olives, oregano, and saute for two minutes. Add tomato sauce. Add pigeon peas (gandules). Add rice and two cups of water or more. Stir. Cook at medium heat until water evaporates. Cover and cook at low heat until rice is tender.
