4 to 6 medium potatoes (boiled in their jackets, cooled, peeled, and diced and drizzled with hot bacon fat).
2 hard boiled eggs, peeled and chopped.
2 small green onions, sliced thin.
2 radishes sliced thin.
2 stalks celery, diced.
1 Carrot, grated.
1 tbsp. crumbled bacon or bacon bits.
1 heaping Tbsp. pickle relish (no juice)
1/2 tsp. salt.
Miracle
Whip to taste.

This is one of those salads that Omi just threw together. Robin Dotson added this recipe to Omi's 90th birthday scrapbook giving us amounts of each ingredient. You can adjust to personal taste. Here again I mix the mayonnaise, pickle relish, salt and a little mustard together separately and add to the potato salad just enough to make everything stick together. Libby Welter
