Chicken (or Duck) Casserole Recipe

8 Chicken Thighs bone in (can use Chicken Breasts)
1 Onion - finely chopped
2 rashers Bacon - chopped
170g packet dried Cranberries
1/2 cup of Water
1 tsp dried Rosemary
25g Butter
2 cloves Garlic - peel and chop
34g packet Cream of Chicken Soup (can replace with chicken stock if you don't have soup)
1 cup Red Wine
1 Bay Leaf
Freshly ground Black Pepper

Directions:
Directions:
Melt butter in frypan and brown skinless chicken. When browned place in casserole dish.

Add onion, garlic and bacon to frypan and cook until onion softens. Then place in casserole dish.

Sprinkle over chicken soup, add wine, cranberries, water, rosemary, bay leaf and pepper.

Place lid on casserole dish, cook at 180ºC for 50-60 minutes. Remove bay leaf before serving.
