2 c. diced, peeled peaches
1 c. diced, unpeeled english hothouse cucumbers
3/4 c. diced red bell pepper
1/3 c. chopped frsh cilantro
2 T. fresh lime juice
2 T. apricot preserves
1 t. chopped canned chipotle chiles
tortilla chips

Mix first 7 ingredients in bowl, season with salt and pepper (can b prepared 2 hours ahead of time) cover and refrigerate.

serve with tortilla chips or serve over chn, turkey or any kind of pork.
