For eaters who do NOT like the texture of an omelet but LOVE the ingredients:

5 eggs (this will feed 5 people-increase eggs for larger groups--you may also use egg whites only to be healthier but it will decrease serving size)
1 cup cubed ham
2 tomatoes (cut into wedges)
1 large handful of spinach leaves *you may also add onions, peppers, mushrooms, etc.
2 slices cheese (if desired)

1- Crack eggs, add to warm pan
2- Begin to scramble eggs
3-Add ham to eggs and cook a few minutes
4-Add spinach and tomatoes (and any other vegetable) and continue to cook on high until eggs are finished and vegetables have shrunk in size.
5- Add sliced cheese in strips at the end of cooking and allow them to melt and blend into food.
6-Can serve in a tortilla for a breakfast burrito or with a side of toast
