4-8 peaches pealed and sliced, enough to fill baking dish ore you can use canned peaches, adjusting for the sugar and liquid.
2-3 tbsp. minute tapioca
1tsp. cinnamon
1tsp. nutmeg
1/2tsp. salt
11/2 cups sugar
1-2 cups water
few drops lemon extract
few drops almond extract

mix ingredients in large mixing bowl making sure peaches are coated well. place mix in baking dish.
you can make your own short cakes or do as I do and use Bisquick baking mix with the short cake recipe on the side of the box. mix ingredients. flatten out to about 4" patties
and place on top of the cobbler in the baking dish. sprinkle a little sugar and cinnamon on top.
bake at 400degrees for 15min. then 350 degrees til done, 15-20 min., depending on your oven.
