3 lbs frozen hashbrown shredded potatoes
1 large onion
1 & ½ cans of celery soup
24 oz. sour cream
1 ½ cube of butter or margarine (3/4 cup)
Salt and pepper
2 ¼ cups of cheddar cheese
3 cups crushed corn flakes

This is 1 1/2 recipe for a large rectangle (9'x13') casserole dish.

Directions:
Directions:
Mix hashbrown potatoes, onions, celery soup, sour cream, 1/2 cup butter/margarine (1 cube), salt and pepper, and 1 1/2 cups of cheese.

Mix 1/4 cup (1/2 cube) melted butter/margarine with cornflakes and 3/4 cup cheese. Sprinkle on top.

Bake at 350 for 1 hour.

This potato casserole is very rich with so much butter and sour cream. I have lessened the calories by adding low fat sour cream and lower fat margarine. I often serve this at Christmas with BBQed beef.. Or bring it to potlucks at Lighthouse.
