2 1/2 to 3 lbs. cucumbers
1 1/2 c. vinegar
1 c. water
1 c. sugar
1/2 c. mustard
2 t. salt
1 t. horseradish

Directions:
Wash cucumbers. Cut into 1/2" chunks. Measure 8 cups. In saucepan mix vinegar, water, sugar, mustard, salt and horseradish. Bring mixture to a boil. Pack cukes into hot, clean, pint jars. Pour boiling pickling liquid to make within 1/2" of top. Liquid will be cloudy due to mustard. Adjust lids tight. Process in boiling water bath 5 minutes. Start timing when water returns to boil. Mustard may settle out during standing. 4 pints.
